I’ve proudly experienced different cultures’ food, authentic and sophisticated. However, in my heart all the Michelin Stars still go to my grandmother.
One of my all time favorites from Grandma’s kitchen is Cheese Pancakes or as we call them at home “Sirniki”. Grandma usually makes them with Farmers Cheese but in the States it is a bit rare to find it. I sometimes make the cheese at home, but most of the time I just use Ricotta Cheese instead. Both ways they come out delicious.
My son absolutely loves them (and my husband tends to steal a couple from him). This makes me very happy as the Sirniki are a great source of Calcium and protein.
This is a very basic recipe. There are many options for upgrading: add raisins to the batter, lemon zest, cinnamon… the sky is the limit.
1 cup Ricotta Cheese/Farmers Cheese
1 Tablespoon Sugar
1/4 cup flour plus for coating
oil or butter for frying
1. Start by heating the pan on medium-low heat.
2. In a bowl mix together the Ricotta Cheese/Farmers Cheese, egg, sugar and flour.
3. Add oil to the pan.
4. Take a tablespoon full of batter and coat it in flour. Then fry it on both sides under a lid on medium-low heat until lightly brown.
5. You can serve the Sirniki with any toppings that come to your mind.
Our usual: honey/preserves/fresh berries along with a dollop of sour cream.
